refs https://github.com/TryGhost/Toolbox/issues/499 - The mockManager's sentEmailCount is left here to avoid breaking many tests that already depend on this method. With future improvements to email snapshot tests this method should not be used. Instead, emailMockReceiver's own sentEmailCount method should be used directly.
