Switch to nixpkgs-unstable (#1921) 
The main reason for doing this is that it saves us the trouble of
having to backport changes, e.g., a newer MacOS toolchain.

channels

This folder contains the upstream Nix channels that are used for the dev-env. We currently follow nixpkgs-unstable.

Updating
