Robert 501cb32604 tests: drop stale coverage-related functionality from test-server.sh 
This coverage-related functionality has been inactive for a while, so
chances are it's rotted by now anyway. Removing in order to make
things a little bit simpler.

TODO(swann): write this out better

Any tests in test-server.sh should also have their names added to server-test-names.txt, otherwise the CI pipelines will not run them.
