treewide: add meta.mainProgram to packages with a single binary
...
The nixpkgs-unstable channel's programs.sqlite was used to identify
packages producing exactly one binary, and these automatically added
to their package definitions wherever possible.

* Remove package name

Also reword some descriptions and move some long descriptions to
longDescription.

php: Add mcrypt optional support
...
Use an override with mcrypt = true to enable libmcrypt support in php.
The --disable-posix-threadsds mcrypt build option was required by php.
