Pascal Bach 5d2d3ce279 plex: use buildFHSUserEnvBubblewrap
Switch the plex server to use buildFHSUserEnvBubblewrap.

Still requires shared PID namespace as plex refuses to start otherwise,
it thinks it's already running.
