examples: avoid re-instantiating nixpkgs where possible (#460)
* i.e. if we neither set localSystem/crossSystem, nor add overlays, we
  can directly utilize `nixpkgs.legacyPackages.${system}` directly and
  avoid re-evaluating nixpkgs an additional time
