Fix duplicate 'v' prefix in server version display on StreamsScreen (#14)
The Parseable API already returns the version with a 'v' prefix (e.g.,
"v1.6.2"), but StreamsScreen was prepending another 'v', resulting in
"vv1.6.2". Remove the hardcoded 'v' prefix from the format string.
