This PR replaces `live_kit_server`'s usage of `jwt` with `jsonwebtoken`.
`jwt` hasn't been updated in 2 years and seems unmaintained.
`jsonwebtoken` has significantly more downloads and appears to be a
healthier crate overall.

This PR vendors the protobuf files from the LiveKit protocol so that we
don't need to have that entire LiveKit protocol repo as a submodule.
---
Eventually I would like to replace this with the
[`livekit-protocol`](https://crates.io/crates/livekit-protocol) crate,
but there is some churn that needs to happen for that.
The main problem is that we're currently on a different version of
`prost` used by `livekit-protocol`, and upgrading our version of `prost`
means that we now need to source `protoc` ourselves (since it is no
longer available to be compiled from source as part of `prost-build`).

Notable things I've had to fix due to 1.78:
- Better detection of unused items
- New clippy lint (`assigning_clones`) that points out places where assignment operations with clone rhs could be replaced with more performant `clone_into`

This patch puts the prost, prost-build, and prost-types dependencies
together and unifies their version. This improves organization a bit in
addition to improving build time slightly, since a redundant version of
prost is now removed.
The dependencies are _not_ updated to the newest versions, because the
newest versions add a dependency on the `protoc` application, which is
not provided by cargo and thus breaks the building process.
This PR moves the Clippy configuration up to the workspace level.
We're using the [`lints`
table](https://doc.rust-lang.org/cargo/reference/workspaces.html#the-lints-table)
to configure the Clippy ruleset in the workspace's `Cargo.toml`.
Each crate in the workspace now has the following in their own
`Cargo.toml` to inherit the lints from the workspace:
```toml
[lints]
workspace = true
```
This allows for configuring rust-analyzer to show Clippy lints in the
editor by using the following configuration in your Zed `settings.json`:
```json
{
"lsp": {
"rust-analyzer": {
"initialization_options": {
"check": {
"command": "clippy"
}
}
}
}
```

This PR sorts the dependency lists in our `Cargo.toml` files so that
they are in alphabetical order.
This should make them easier to visually scan when looking for a
dependency.
Apologies in advance for any merge conflicts 🙈
